Healthy Recipe: Pumpkin Spice Oatmeal

Today marked the beginning of Fall, and to ring it in appropriately, I wanted an appropriate breakfast this morning. I’m also on an oatmeal kick, because its quick in the morning and I can do so much with it.

Enter Pumpkin.

Pumpkin Spice Oatmeal
Prep Time:5 minutes
Cook Time: 1 minute
Serves 1 as a meal

Fat:11 g
Carbs:43 g
Protein: 10 g

1/2 cup rolled oats (do not use instant oats!!!)
1/4 cup canned pumpkin (not pumpkin pie filling, just pure pumpkin)
1/2 tsp pumpkin pie spice
1/2 tsp cinnamon
1 tsp pure maple syrup (can use honey or agave)
1/2 tsp pure vanilla extract
1 tbsp almond butter (works best if its fresh or chunky)
1/3 cup water
1 tsp Truvia (or other stevia)

1) Add oats, pumpkin, water in a bowl. Microwave for 1 minute.
2) Mix, add maple syrup, vanilla, almond butter and spices, and mix together.
3) Enjoy the deciousness!

Super quick tip: make containers of all the liquids, pumpkin, and almond butter during weekly meal prep. Then just scoop it into a bowl with dry oats, microwave, and enjoy!
