Sometimes I get the urge for something really different for dinner. Last night was one of those nights. I had an urge for oatmeal, but decided I didn’t want to make a big bowl of oatmeal so I got creative.
Peanut Butter Oat Protein Pancakes with Sauteed Maple Apples

Ingredients
1/4 cup Rolled Oats
2 tbsp PB2
2 tbsp Vanilla Protein Powder
1/4 cup Egg whites
1/4 cup coconut almond milk
1/2 tsp cinnamon
1 medium apple
1/2 tbsp pure maple syrup
Directions
1) Mix together Oats, PB2, protein powder, egg whites, coconut almond milk, cinnamon. Heat small to medium pan over medium heat, and spray with cooking spray.
2) Cook pancake (or pancakes) until golden brown on both sides.
3) While pancake cooks, dice apple (with peel still on) and add to sauce pan sprayed with cooking spray over high heat. Sprinkle with cinnamon, and cook until apples start to soften (2-3 minutes).
4) When finished, top pancake with apples, and drizzle with pure maple syrup. Enjoy!
